About us

Charcoal Bay emerges from the shared passion of André and Gabi, a couple who bring their Brazilian heritage to the shores of Northern Rivers, NSW. Andre's extensive and successful culinary career, combined with Gabi's warmth and hospitality, creates an unforgettable dining experience. Together, they grill up delicious dishes that reflect the rich flavours of Brazilian traditional BBQ, inviting you to savour every bite at Charcoal Bay.

Our Chef

Meet André, a passionate chef with over 15 years of experience in top kitchens across Australia and Brazil. André's culinary journey began at a young age, inspired by watching his grandma and mother cook. He honed his skills with a Diploma of Hospitality from Sydney Business and Travel Academy and a Degree in Gastronomy from Anhembi Morumbi University. André has served as Executive Chef at Barbicrew Brazilian BBQ Catering and Head Chef at Henrys in Cronulla and Neutral Bay, earning the prestigious Hat Award from the Australian Good Food Guide (AGFG). With a love for recipe development, kitchen management, and food safety, André ensures every dish at Charcoal Bay is made with precision and care.

Do you provide cutlery, plates, napkins, and table linens?

Yes, we provide disposable sustainable plates, cutlery, and napkins as part of our catering service. Additionally, we include linens for the service table. However, we do not provide linens for the guest tables.

How big is the setup?

Our setup typically includes a marquee measuring 3x3 meters. This provides ample space for our catering station.

What structure do you need to be able to cook?

We require access to electricity for our cooking equipment. Additionally, we operate our charcoal BBQ in an open-air area to ensure proper ventilation and safety during the cooking process.

How long do you stay at the venue from start to end of the service?

Generally, we stay for about 4 hours. This includes approximately 2 hours for setup and starting service.

Can you stay longer?

Yes, we can accommodate extended service hours. There's an additional fee of Au$150 for each additional hour beyond the standard duration.

What happens if it rains?

In the event of rain, we are prepared with a gazebo for cooking under cover. Additionally, our table setup is arranged in an undercover area.

Do you supply chairs and tables?

No, we do not provide chairs and tables as part of our catering service.
